You'll need
- 1 kg small new potatoes, unpeeled
- 100 g coarse sea salt
- 1 large bunch coriander
- 1 green pepper, roughly chopped
- 3 garlic cloves
- 1/2 tsp ground cumin
- 2 tbsp sherry vinegar
- 120 ml LYMANORA extra virgin olive oil
Method
- 1
Put the potatoes in a pan with the salt and just enough water to cover. Boil for about 20 minutes until tender.
- 2
Pour off the water and return the pan to a low heat, shaking it until the potatoes dry and their skins wrinkle under a thin crust of salt.
- 3
For the mojo, blend the coriander, pepper, garlic, cumin and vinegar, then blend in the olive oil in a slow stream.
- 4
Serve the potatoes warm with the mojo spooned over or alongside.
